Dietitians and nutritionists play a crucial role in helping people maintain and improve their health through better dietary choices that can lead to significant improvements in quality of life, disease prevention, and management of chronic conditions.

Due to increasing awareness about the importance of nutrition and the rising prevalence of diet-related diseases, the demand for dietitians and nutritionists is growing.

To join the field and work as a Registered Dietitian Nutritionist (RDN), you must have a BS, clinical/practicum hours, and earn a master’s in nutrition or dietetics. To meet the need for RDNs, Viterbo University has been granted approval to offer an online Master of Science in Community Medical Dietetics degree

Our dietetics master’s program offers three unique options: coordinated program, direct entry, or dietetic intern. Coursework is 100% online, and you can complete your coordinated internship anywhere in the United States.

Master of Science in Community Medical Dietetics - Initial RDN License Prep/Direct Entry

This 63-credit-hour dietetics master’s program combines foundational coursework with the dietetic coordinated internship necessary to become a registered dietitian. You will obtain advanced nutrition skills through graduate coursework with an emphasis in your area of interest. This dietetics program track includes clinical/practicum hours, providing you with all experiences needed to take the registration exam to become a registered dietitian.

To apply for the direct entry dietetics master’s program, you must complete the following pre-enrollment courses with a grade of C or better and send your official transcript to Viterbo. Courses include:

  • Anatomy and Physiology I with Lab
  • Anatomy and Physiology II with Lab
  • Biochemistry
  • General Chemistry or Chemistry for Health Sciences
  • Microbiology with Lab
  • Organic Chemistry

Master of Science in Community Medical Dietetics - Dual Master’s with Dietetic Internship

If you have already graduated from a didactic nutrition program, you are eligible for our dual dietetics master’s with a dietetic internship. You will further your nutritional knowledge and skills through the internship and graduate-level coursework.

You can choose from numerous electives to design your graduate dietetics program around your area of interest. You can also opt for either:

  • A 48-credit hour non-thesis clinical focus that provides intensive clinical/practicum hours if you want additional patient care experience, or
  • A 39-credit hour thesis track that meets accreditation requirements for clinical/practicum hours while providing you with experience working one-on-one with a research advisor to conduct your own research.

If you have already graduated from a didactic dietetics program, you can also opt to apply for the dietetic internship program.

Master of Science in Community Medical Dietetics - RDNs

Our 30-credit hour dietetics master’s program is designed for current RDNs who want to advance their expertise and scope of practice.

This evidence-based program equips you with the advanced skills, knowledge, and behaviors to grow within the field. Emphasis is on disease prevention and management, and you can choose electives that accentuate your current work.

The variety of electives and subsequent research project offer you the flexibility to enhance your current practice or develop expertise in a specific area of personal interest.

Dietetic Internship

If you have earned your bachelor’s degree and completed the knowledge requirements of a DPD program—as defined by the 2017 Accreditation Council for Education in Nutrition and Dietetics’ Standards of Education—our dietetic program internship will help you complete your education requirements to become an RDN.

Dietetics Master’s Program Highlights

If you want to work as an RDN, you must earn a master’s in nutrition or dietetics. Our dietetics programs are accredited by the Accreditation Council for Education in Nutrition and Dietetics (ACEND) and provide the coursework and internship experiences you need to succeed in the field.

  • Experienced faculty. Our faculty members bring a wealth of diverse expertise, having conducted research in areas such as cancer, maternal nutrition, community nutrition, food science, food service, obesity, inflammation, sports nutrition, neurodegenerative disorders, and beyond.
  • Time commitment. Our unique dietetics programs require less time to complete than other programs, which makes Viterbo more affordable in the long run.
  • Convenience. Not only is coursework offered 100% online, but you can also complete your dietetics master’s clinical hours anywhere in the country. We will assist you in securing your clinical placements, so you won’t have to search for a site on your own. Some of our sites offer opportunities to work with NCAA Division I or professional sports teams, such as the Minnesota Vikings. You could even complete your 1,000 hours of clinical/practium in Spain or Denmark.
  • Personalized attention. With courses capped at just 26 students, you will receive personalized attention from your faculty members. You will also be paired with a dedicated academic and research advisor to help you achieve your career goals.
  • Connection. Our Student Dietetics Association provides opportunities to network, volunteer, and raise funds for study materials for the RD exam or travel to nutrition conferences.

In our graduate dietetics programs, you can choose electives based on your professional and personal goals. We offer emphases in sports nutrition, medical nutrition therapy, and community medical dietetics. Other electives include:

If you choose the thesis option for your dietetics master’s, you will complete two research courses under the advisement of an expert in your choice of research area.

  • Earn your master’s degree in just two years of part-time study. The program is offered through a cohort model that includes weekend sessions (weekend intensives) in eight-week courses. Some coursework can be completed online for additional convenience. Our program allows you to continue working full-time while earning your master’s degree.

Ethical Leadership (EdD) Program With Superintendent License

The superintendent track of the EdD in ethical leadership prepares current and future administrators to introduce ethical leadership in education. Graduates of this track will receive their EdD in Ethical Leadership and the coursework and practicum necessary for the Wisconsin (WI 5003) Superintendent licensure. Coursework is completed on-site during weekends in the academic year.

Candidates must possess a principal licensure for admission, and the superintendent track is designed for those already in K-12 educational leadership positions.

The interdisciplinary EdD program is designed for working professionals in any field who want to further their knowledge, skills, and leadership practice in a complex, ever-changing, and diverse world.

  • Flexible Program Options. Our EdD program can be completed full- or part-time, and we offer required courses in the summer, fall, and spring semesters so you can create the plan of study that works best for you.

  • Learn from and collaborate with experienced faculty. Our program’s current full-time faculty members are Licensed Professional Counselors in Wisconsin with extensive clinical experience. Some faculty members are also Registered Play Therapists. As a student in our doctoral program in counselor education and supervision, you will benefit from valuable opportunities to co-teach and conduct research with faculty.
  • Gain real-world experience through multiple internships. CACREP requires all doctoral students to complete a minimum of three internships in one of five areas: 1) counseling, 2) teaching, 3) supervision, 4) research, and 5) leadership/advocacy. You will collaborate with your faculty advisors to select internship opportunities that allow you to engage in new specialty areas or delve into a current area of interest.
  • Develop practical professional skills and expertise. Nearly every course offers learning opportunities directly applicable to the field. Our research-based courses (COUN 710, 712, 714) require you to design a research study, apply for Institutional Review Board approval, and collect, analyze, and share your findings. You’ll also receive essential training through our counseling labs and Play Therapy training space.

Chart Your Career Path With Your Master of Science in Mental Health Counseling Degree

Viterbo University’s Master of Science in Mental Health Counseling (MSMHC) degree program educates counselors who will integrate the values of contemplation, integrity, hospitality, stewardship, and service into their personal and professional lives.

Our curriculum exceeds national and state standards by requiring core coursework in:

  • Addiction counseling
  • Psychopharmacology
  • Family counseling
  • Trauma and crisis counseling, with an emphasis on ethical professional practice.

The program also provides training emphasis on psychodiagnostics, psychometrics, and psychopharmaceutical knowledge and clinical skill sets applicable across patients’ life span.

Internships in a clinical setting are designed to guide you toward independent work with clients while under the full supervision of a site supervisor. You will complete 600 hours of internship placement, 240 hours of which includes direct client contact.

Students in Viterbo’s MSCMHC program have opportunities to learn through a variety of teaching methodologies, including

Master of Mental Health Counseling Program Details

Program format and class structure
Weekday classes meet primarily on Wednesday and Thursday evenings—from either 3 p.m.–6 p.m. or 6:30 p.m.–9:30 p.m. Weekday classes meet for the full semester, meeting every week.

Weekend intensive classes meet a total of three weekends—Fridays from 5 p.m.–10 p.m. and Saturdays from 8 a.m.–5 p.m.

The program cannot be completed by taking only weekend intensives or only weekday classes.

Electives and focus area
Students must take two electives, allowing you to focus on an area of interest.

Average time to complete your degree
Accelerated path: seven semesters (year-round, taking a minimum of nine credits each semester)

Traditional path: 10 semesters (year-round, taking a minimum of six credits each semester)

National counseling honor society
Students who have completed at least one semester of coursework with a GPA of 3.5 or above will be invited to join Viterbo’s chapter of the national counseling honor society, Chi Sigma Iota. Throughout the year, CSI hosts events that foster networking connections, enhanced learning, and volunteer-related opportunities.

Master of Science in Mental Health Counseling Program Accreditation and Licensing Requirements

Our MSCMHC degree is accredited by the Council for Accreditation of Counseling and Related Educational Programs (CACREP). Our program is designed to meet state requirements for licensure as mental health counselors in the states of Wisconsin, Minnesota, and Iowa. You will be prepared for a career as a licensed clinical professional counselor (LPC/LPCC/LMHC).

Master of Science in Mental Health Counseling Program Advantages

Our MS program offers you several advantages, including:

  • Learn from expert faculty in small classes. Our current full-time faculty members are licensed professional counselors in the state of Wisconsin with extensive clinical experience. Two faculty members are registered play therapists in addition to being LPCs. Class sizes range from 10–20 students. However, all clinical courses (690, 695, and 696) are capped at six students, based on CACREP recommendations for student-to-faculty ratios.
  • Gain hands on experience in state-of-the-art learning facilities. Our counseling labs provide advanced learning opportunities that are essential to training our students. We offer a play therapy training space with plans for a second room soon.
  • Enjoy the educational benefits of our location. You will enjoy opportunities to pursue clinical internships with organizations and facilities in La Crosse (and Onalaska) as well as many surrounding smaller towns. Our strong regional reputation among counselors is enhanced through our numerous professional placements and successful graduates practicing in the region.
  • Benefit from successful student outcomes.
    • Placement rates: The most recent job placement rate for graduates of the program seeking employment is 95%. Of these graduates, 75% obtained employment before graduation or within one month of graduation.
    • Licensure Rates: 95% of program graduates who have met the requirements for postgraduate supervised practice and sought licensure are licensed.
    • Results on the Counselor Preparation Comprehensive Examination: The program requires students to complete the Counselor Preparation Comprehensive Examination (CPCE) published by the Center for Credentialing and Education, a corporate affiliate of the National Board of Certified Counselors. In the most recent year, the Viterbo student mean exceeded the national mean on the CPCE in 87% of the knowledge areas.
    • 100% of graduates who met the requirements for postgraduate supervised practice successfully obtained licensure.

  • Completing action research with human subjects in COUN 660
  • Engaging in mock counseling sessions to develop individual and group counseling skills in COUN 675 and COUN 680
  • One practicum and two internships: these courses help you begin the process of accruing hours for professional licensure

Our most recently developed elective is a course on experiential and expressive techniques in counseling. This course covers a wide variety of expressive mediums and modalities that can be utilized across cultures as well as across the lifespan.
